Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  • Preheat oven to 200°C (400°F).
  • Pat chicken thighs dry with paper towels to ensure crispy skin.
  • In a bowl, combine olive oil, garlic, rosemary, thyme, oregano, salt, pepper, and lemon juice.
  • Rub the herb mixture evenly over the chicken thighs, including under the skin if possible.
  • Place chicken thighs skin-side up on a baking tray or roasting pan.
  • Roast for 35–45 minutes until the skin is crispy and internal temperature reaches 75°C (165°F).
  • Let rest for a few minutes before serving.
