Description

High-Protein Ground Beef & Sweet Potato Skillet is a healthy one-pan meal packed with lean protein, fiber-rich sweet potatoes, and bold spices. This easy skillet recipe is perfect for meal prep, quick dinners, and anyone looking for a balanced, high-protein meal with simple ingredients.

Ingredients

  • Ground beef
  • Sweet potatoes, peeled and diced
  • Olive oil
  • Onion, chopped
  • Garlic, minced
  • Salt
  • Black pepper
  • Paprika
  • Cumin
  • Chili powder (optional)
  • Spinach or kale (optional)
  • Fresh parsley or cilantro (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add diced sweet potatoes and cook for 8–10 minutes, stirring occasionally, until slightly softened.
  • Add chopped onion and cook until translucent. Stir in minced garlic.
  • Push vegetables to one side and add ground beef. Cook until browned, breaking it apart.
  • Season with salt, black pepper, paprika, cumin, and chili powder if using.
  • Mix everything together and cook until sweet potatoes are tender and beef is fully cooked.
  • Stir in spinach or kale if desired and cook until wilted.
  • Remove from heat and garnish with fresh herbs before serving.

Notes

  • Use lean ground beef (85–90%) for less grease.
  • Cut sweet potatoes evenly for consistent cooking.
  • Add a splash of broth or water if the skillet becomes too dry.
  • Customize spices based on your taste preference.
