Ingredients
- 2 cups heavy cream
- 3/4 cup granulated sugar
- 1/3 cup key lime juice (fresh preferred)
- 1 tsp lime zest
- 1 cup graham cracker crumbs
- 3 tbsp butter, melted
Instructions
- In a saucepan over medium heat, combine heavy cream and sugar. Stir until sugar dissolves and the mixture just begins to simmer.
- Remove from heat and let cool slightly for 2–3 minutes.
- Stir in key lime juice and lime zest. The mixture will naturally begin to thicken.
- Pour into serving glasses or ramekins.
- In a small bowl, mix graham cracker crumbs with melted butter until evenly combined.
- Spoon the crumb mixture over the top or layer it at the bottom for a crust effect.
- Refrigerate for at least 3–4 hours, or until set.
- Serve chilled, optionally garnished with extra lime zest or whipped cream
