Description

Late Summer Peach Soup is a refreshing chilled soup made with ripe peaches, citrus, and a touch of cream or yogurt. This easy peach soup recipe is perfect for warm weather, delivering a naturally sweet, smooth, and elegant dish ideal for appetizers or light desserts.


Ingredients

45 ripe peaches, peeled, pitted, and chopped
1 cup orange juice
2 tablespoons lemon juice
2–3 tablespoons honey or sugar (to taste)
1/2 cup plain yogurt or heavy cream
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
Pinch of salt
Fresh mint leaves, for garnish


Instructions

Place the chopped peaches, orange juice, lemon juice, and honey or sugar in a saucepan.

Cook over medium heat for about 10 minutes, until the peaches are soft and tender.

Remove from heat and allow the mixture to cool slightly.

Transfer to a blender and blend until completely smooth.

Add yogurt or cream, vanilla extract, cinnamon, and a pinch of salt. Blend again until silky.

Refrigerate for at least 2 hours, or until fully chilled.

Stir before serving and garnish with fresh mint. Serve cold.
