Ingredients

For the puddings:

  • 1 cup dried figs, chopped
  • 1/2 tsp baking soda
  • 1 cup hot water
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract

For the caramel sauce:

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  • Preheat oven to 180°C (350°F) and grease a muffin tin or ramekins.
  • Place chopped figs in a bowl, add baking soda, and pour over hot water. Let sit for 10 minutes to soften.
  • In a bowl, cream butter and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
  • In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
  • Gradually mix dry ingredients into wet mixture. Fold in softened fig mixture along with its liquid.
  • Divide batter evenly into prepared tins.
  • Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
  • For the caramel sauce, melt butter in a saucepan over medium heat. Stir in brown sugar and cook until dissolved.
  • Add heavy cream and simmer until smooth and slightly thickened. Remove from heat and stir in vanilla and salt.
  • Let puddings cool slightly, then serve warm with caramel sauce drizzled on top
