Ingredients
For the puddings:
- 1 cup dried figs, chopped
- 1/2 tsp baking soda
- 1 cup hot water
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 2 eggs
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 tsp vanilla extract
For the caramel sauce:
- 1/2 cup butter
- 3/4 cup brown sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 180°C (350°F) and grease a muffin tin or ramekins.
- Place chopped figs in a bowl, add baking soda, and pour over hot water. Let sit for 10 minutes to soften.
- In a bowl, cream butter and brown sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
- In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually mix dry ingredients into wet mixture. Fold in softened fig mixture along with its liquid.
- Divide batter evenly into prepared tins.
- Bake for 18–22 minutes, or until a toothpick inserted comes out clean.
- For the caramel sauce, melt butter in a saucepan over medium heat. Stir in brown sugar and cook until dissolved.
- Add heavy cream and simmer until smooth and slightly thickened. Remove from heat and stir in vanilla and salt.
- Let puddings cool slightly, then serve warm with caramel sauce drizzled on top
