Nana’s Date Loaf is a classic homemade treat packed with naturally sweet dates, delivering a moist texture and rich caramel-like flavor. This easy date loaf recipe is perfect for tea time, dessert, or a comforting snack, and tastes even better the next day.
Ingredients
- 1 1/2 cups chopped dates
- 1 teaspoon baking soda
- 1 cup boiling water
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 180°C (350°F) and grease or line a loaf pan.
- Place chopped dates in a bowl, sprinkle with baking soda, and pour over boiling water. Let sit for 10 minutes to soften.
- In another bowl, cream butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Fold in the softened date mixture.
- In a separate bowl, mix flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a skewer inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix the batter to keep the loaf soft and tender.The loaf develops deeper flavor after resting overnight.Add nuts or spices for variation and extra texture.
