Ingredients
- 1 cup (200g) sugar
- ½ cup (115g) butter (softened)
- 2 eggs
- 1 cup (125g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 6–8 plums (halved and pitted)
- 1 tsp cinnamon
- 1 tsp lemon juice
Instructions
- Preheat oven to 180°C (350°F) and grease an 8–9 inch cake pan.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture, stirring until smooth.
- Spread batter evenly into the prepared pan.
- Arrange plum halves on top, cut side down, gently pressing them in.
- Sprinkle with cinnamon and a little extra sugar, then drizzle with lemon juice.
- Bake for 40–45 minutes until golden and cooked through.
- Cool before slicing and serving.
