Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 2 tablespoons red food coloring

For the Frosting:

  • 8 oz (225g) cream cheese
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 180°C (350°F) and grease and line two round cake pans.
  • In a bowl, sift together flour, cocoa powder, baking soda, and salt.
  • In another bowl, cream butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in oil, buttermilk, vanilla extract, vinegar, and red food coloring.
  • Gradually add dry ingredients to the wet mixture, mixing until just combined.
  • Divide batter evenly between pans.
  • Bake for 25–30 minutes, until a toothpick inserted in the center comes out clean.
  • Cool completely before frosting.
  • For frosting, beat cream cheese, powdered sugar, and vanilla until smooth.
  • Assemble cake by frosting between layers and covering the top and sides.
