Description

Roasted Delicata Squash is an easy, healthy side dish with sweet, nutty flavor and tender roasted texture. This simple roasted delicata squash recipe uses pantry staples and comes together quickly, making it perfect for weeknight dinners, holiday meals, or fall-inspired menus.


Ingredients

2 medium delicata squash, washed
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika or chili flakes, optional
1 teaspoon fresh thyme or rosemary, optional


Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Slice each delicata squash in half lengthwise and scoop out the seeds with a spoon. Cut into half-moon slices about 1/2 inch thick.

Place the squash slices on the prepared baking sheet. Drizzle with olive oil and season with salt, black pepper, garlic powder, and any optional paprika, chili flakes, or herbs. Toss until evenly coated.

Spread the slices into a single layer. Roast for 20 to 25 minutes, flipping halfway through, until the squash is fork-tender and lightly caramelized around the edges.Serve warm.


Notes

The skin of delicata squash is edible, so there is no need to peel it.For a sweeter variation, drizzle with honey or maple syrup before roasting.For a savory finish, sprinkle with Parmesan cheese during the last few minutes of roasting.You can also season it with cinnamon and nutmeg for a warm fall flavor, or finish with lemon juice or balsamic glaze for extra brightness.Store leftovers in an airtight container in the refrigerator for up to 4 days.
