Ingredients

  • 1.52 lbs (700g–900g) beef chuck or stewing beef, cut into chunks
  • 23 tablespoons red curry paste
  • 1 can (400ml) coconut milk
  • 1 cup beef broth
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 12 bell peppers, sliced
  • 2 carrots, sliced
  • 2 tablespoons olive oil or vegetable oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro or basil for garnish

Instructions

  • Heat oil in a pan over medium heat and sear the beef chunks until browned on all sides.
  • Transfer the beef to the slow cooker.
  • In the same pan, sauté the onion, garlic, and ginger until fragrant.
  • Stir in the red curry paste and cook for 1–2 minutes to release its aroma.
  • Transfer the mixture to the slow cooker.
  • Add coconut milk, beef broth, fish sauce, and brown sugar. Stir gently to combine.
  • Add the sliced bell peppers and carrots.
  • Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender.
  • Stir in lime juice before serving and adjust seasoning if needed.
  • Garnish with fresh cilantro or basil and serve hot.
