Slow Cooker Satay Chicken is a creamy and flavorful dish made with tender chicken simmered in a rich peanut sauce. This easy slow cooker satay chicken recipe delivers bold Southeast Asian-inspired flavors, perfect for a comforting and satisfying meal with minimal effort.


Ingredients

  • 1.52 lbs (700g–900g) chicken breasts or chicken thighs
  • ½ cup peanut butter
  • 1 can (400ml) coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 12 tablespoons brown sugar or honey
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon curry powder
  • ½ teaspoon red pepper flakes or 1 teaspoon chili paste (optional)
  • ½ cup chicken broth (as needed to thin sauce)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh cilantro and chopped peanuts for garnish

Instructions

  1. Place the chicken in the slow cooker.
  2. In a bowl, whisk together peanut butter, coconut milk, soy sauce, lime juice, brown sugar or honey, garlic, ginger, curry powder, and optional chili paste.
  3. Pour the sauce over the chicken, ensuring it is well coated.
  4. Add chicken broth as needed to slightly thin the sauce.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is tender.
  6. Remove the chicken and shred it using two forks.
  7. Return the shredded chicken to the slow cooker and stir well to coat in the sauce.
  8. Taste and adjust seasoning with salt, pepper, or additional lime juice if needed.
  9. Garnish with fresh cilantro and chopped peanuts before serving.
