Ingredients
- 4 chicken thighs or chicken breasts
- 1 can (400g) crushed tomatoes
- 2 tablespoons tomato paste
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ cup chicken broth
- Optional: ½ teaspoon red pepper flakes
- Fresh parsley or basil for garnish
Instructions
- Heat olive oil in a pan over medium heat. Sauté the chopped onion and garlic until soft and fragrant.
- Place the chicken in the bottom of the slow cooker.
- Add the sautéed onion and garlic over the chicken.
- Pour in the crushed tomatoes, tomato paste, and chicken broth.
- Season with oregano, basil, salt, pepper, paprika, and optional red pepper flakes.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and fully cooked.
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley or basil before serving.
