Description

Ingredients

  • 1 whole chicken (about 1.52 kg)
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, quartered
  • 4 garlic cloves
  • 2 bay leaves
  • Fresh thyme or parsley
  • Salt, to taste
  • Black pepper, to taste
  • 68 cups chicken broth or water
  • 12 cups noodles or rice (optional)

Instructions

  • Place the whole chicken into the slow cooker.
  • Add carrots, celery, onion, garlic, bay leaves, and herbs around the chicken.
  • Season with salt and black pepper.
  • Pour in enough chicken broth or water to cover most of the chicken.
  • Cover and cook on low for 7–8 hours or high for 4–5 hours, until the chicken is tender.
  • Carefully remove the chicken and shred the meat, discarding bones and skin.
  • Return shredded chicken to the slow cooker.
  • Add noodles or rice if using, and cook until tender.
  • Taste and adjust seasoning as needed.
  • Serve hot, garnished with fresh herbs if desired.
