Ingredients
- Button or cremini mushrooms
- Olive oil
- Garlic, minced
- Salt
- Black pepper
- Pesto sauce
- Burrata cheese

Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Clean mushrooms and pat dry thoroughly to remove excess moisture.
- Arrange mushrooms on the baking sheet and gently smash each one using the bottom of a glass.
- Drizzle with olive oil and sprinkle with garlic, salt, and black pepper. Toss lightly to coat.
- Roast for 20–25 minutes until mushrooms are tender with crispy edges and moisture has evaporated.
- Transfer to a serving plate.
- Top with spoonfuls of pesto and place burrata in the center or tear it over the mushrooms.
- Finish with lemon zest, red pepper flakes, and fresh basil if desired. Serve immediately
