Description

Ingredients

  • 500g chicken thighs or breasts
  • 1 1/2 cups long grain rice
  • 3 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt and black pepper.
  2. Heat olive oil in a large pot over medium heat and brown the chicken on both sides. Remove and set aside.
  3. In the same pot, sauté onion, garlic, and carrots until softened.
  4. Stir in cumin, coriander, paprika, turmeric, and cinnamon. Cook briefly until fragrant.
  5. Add rice and stir to coat with the spice mixture.
  6. Pour in chicken broth and bring to a gentle simmer.
  7. Return chicken to the pot, placing it on top of the rice.
  8. Cover and cook on low heat until rice is tender and chicken is fully cooked.
  9. Remove from heat and let rest for a few minutes.
  10. Fluff rice with a fork, garnish with fresh parsley, and serve.
