Ingredients

  • 1 kg beef chuck or stewing beef, cut into chunks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp red curry paste
  • 4 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 onion, sliced
  • 2 cups coconut milk
  • 1 cup beef broth
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 bell peppers, sliced
  • 2 carrots, sliced
  • 1 tbsp lime juice
  • Fresh basil or cilantro (optional, for garnish)

Instructions

  • Season the beef with salt and black pepper.
  • Place the beef in the slow cooker along with sliced onion, garlic, and ginger.
  • In a bowl, mix coconut milk, red curry paste, beef broth, fish sauce, and brown sugar.
  • Pour the mixture over the beef.
  • Cover and cook on low for 7–8 hours or high for 4–5 hours, until the beef is tender.
  • About 30 minutes before serving, add bell peppers and carrots.
