black beans
onion
garlic
carrots
celery
olive oil
vegetable broth
diced tomatoes
cumin
chili powder
smoked paprika
oregano
salt
black pepper
lime juice
fresh cilantro
sour cream
avocado

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, carrots, and celery and cook until softened.
  • Stir in minced garlic and cook for about 30 seconds until fragrant.
  • Add black beans, diced tomatoes, vegetable broth, cumin, chili powder, smoked paprika, oregano, salt, and black pepper.
  • Bring the soup to a simmer and cook for about 25 to 30 minutes.
  • Use an immersion blender to partially blend the soup for a thicker texture, leaving some beans whole.
  • Stir in lime juice and adjust seasonings if needed.
  • Serve hot topped with fresh cilantro, sour cream, avocado, or your favorite toppings.

Notes

For a spicier soup, add jalapeños or cayenne pepper. Fire-roasted tomatoes add extra depth of flavor. This soup freezes very well, making it an excellent option for meal prep and easy future meals.
