Ingredients
- 2 cups fresh tomatoes, diced
- 1 cup zucchini, finely chopped
- ¼ cup red onion, finely diced
- 2–3 tablespoons fresh cilantro, chopped
- 1–2 tablespoons lime juice
- 1 clove garlic, minced
- 1 small jalapeño, finely chopped (optional)
- 1 tablespoon olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Dice the tomatoes and finely chop the zucchini into small, even pieces. Place in a large mixing bowl.
- Add red onion, cilantro, and minced garlic.
- If using, finely chop the jalapeño and add to the mixture.
- Drizzle in lime juice and olive oil.
- Season with salt and black pepper.
- Toss everything together until well combined.
- Let the salsa rest for 10–15 minutes to allow flavors to meld.
- Taste and adjust seasoning before serving.
