Ingredients
- 2 cups (250g) all-purpose flour
- ¾ cup (150g) sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup (180ml) fresh orange juice
- 1 tbsp orange zest
- 2 apples (peeled and chopped or grated)
- ½ cup (120ml) vegetable oil
- ½ cup (120ml) plant-based milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 180°C (350°F) and grease a cake pan.
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine orange juice, orange zest, oil, plant-based milk, and vanilla extract.
- Gradually add wet ingredients to dry ingredients, mixing until just combined.
- Fold in the apples gently.
- Pour batter into prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely before slicing and serving.
