Ingredients

- 150g feta cheese, crumbled
- 3 eggs
- 1 cup heavy cream or crème fraîche
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- 1 tsp dried oregano or thyme
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 180°C (350°F).
- Roll out the pastry and press it into a tart pan, trimming excess edges.
- Prick the base with a fork and pre-bake for 10 minutes.
- In a bowl, whisk eggs, cream, garlic, salt, pepper, and herbs.
- Arrange sliced courgettes evenly over the crust.
- Sprinkle crumbled feta cheese on top.
- Pour the egg mixture over the filling.
- Drizzle lightly with olive oil and sprinkle Parmesan if using.
- Bake for 30–35 minutes, until the filling is set and golden.
