For the Apple Layer:
- 4 medium apples, peeled and diced
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
For the Creamy Filling:
- 16 ounces cream cheese, softened
- 1 cup powdered sugar
- 2 teaspoons vanilla extract
- 2 cups whipped topping or homemade whipped cream
Instructions
- Peel, core, and dice the apples into small pieces.
- In a saucepan over medium heat, combine apples, brown sugar, cinnamon, lemon juice, and cornstarch. Cook until apples soften and the mixture thickens, about 8–10 minutes. Let cool completely.
- In a large bowl, mix oats, graham cracker crumbs, brown sugar, cinnamon, and melted butter until crumbly.
- Press half of the oatmeal mixture firmly into the bottom of a 9×13-inch dish to create the crust.
- In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold whipped topping into the cream cheese mixture until light and fluffy.
- Spread half of the cream cheese mixture evenly over the crust.
- Spoon the cooled apple filling over the cream layer.
- Spread the remaining cream cheese mixture over the apples.
- Sprinkle the remaining oatmeal crumble mixture over the top.
- Cover and refrigerate for at least 4 hours, or overnight for best texture and flavor.
- Slice and serve chilled.
