This classic Shortbread recipe creates buttery, melt-in-your-mouth biscuits with a delicate crumb and lightly crisp edges. Made with just a few simple ingredients, this traditional shortbread is perfect for tea time, gifting, or everyday baking.
Ingredients
- 1 cup butter, softened
- 1/2 cup icing sugar
- 2 cups plain flour
- 1/4 cup cornflour
- 1 tsp vanilla extract (optional)
Instructions
- Preheat oven to 160°C and line a baking tray with baking paper.
- In a bowl, cream the butter and icing sugar until light and smooth.
- Add vanilla extract (if using) and mix well.
- Sift in flour and cornflour, then gently mix until a soft dough forms.
- Turn dough onto a lightly floured surface and roll to about 1 cm thickness.
- Cut into shapes or press into a tin and score into portions.
- Place on prepared tray and prick lightly with a fork.
- Bake for 20–25 minutes, until edges are just lightly golden.
- Cool on the tray, then transfer to a rack to cool completely.
